Ginger Lime Cocktail
Hi loves, hope you are almost ready for Spring. It will officially arrive on March 20th. The weather here in New England has been crazy … going between unseasonably warm temperatures and major snow storms. I’m thinking Mother Nature didn’t get the memo as to what’s going on. Saint Patrick’s Day is the day after tomorrow and I’m sure many of you will be mixing up some tasty drinks (or maybe just drinking some tasty craft beers) either way, tis a day where lots of toasting will be happening across the country. If you follow me on Instagram and watch my instastories, you already know that I love wine and cocktails, which is why I love playing bartender and mixing up new cocktail recipes to share with you here on the blog. Today, I’m sharing a recipe that’s more of a crafted cocktail. You know, like one you’d find at a craft cocktail bar or really nice restaurant. I wanted to play with an herb to add a bit of savoriness and thought thyme wasn’t a heavily fragrant herb and that it would balance nicely with the flavors of ginger and lime. Turns out my thoughts were right. This ginger lime cocktail is so smooth and goes down really easy leaving just a tad bit of the thyme flavor dancing on the back of your tounge. It’s a delightful cocktail for entertaining, not only for St. Patricks Day, but also in the upcoming warmer months.
- 2 cups of tonic water
- ¾ cups Fevertree Premium Ginger Ale
- ½ cup St. Germaine (or another elderflower liquor)
- ¼ cup lime liquor
- THYME INFUSED SYRUP:
- 1 cup white sugar
- ¾ water
- 3 sprigs of fresh thyme
- Juice of ½ a lime
- Make the thyme infused simple syrup first. In a small saucepan, combine all the ingredients for at the simple syrup. Bring to a rapid boil, remove from fire. Set aside to cool to room temperature.
- Make the base next. In a pitcher, combine the tonic water, Evertree Ginger Ale, St. Germain and lime vodka. Stir.
- When ready to serve pour the syrup into the base and serve over ice. Can make the morning of. Do not make it over night.
